Quando eu tentava dizer 'enjoy' e 'fun' em português, sempre tive problemas. Por que?

Fun

Fun, like music, is non-countable. You have fun, and you listen to music.

We have some countable words that involve fun, but none of them are really the same as fun. They are like the Portuguese words: a pastime, a diversion. A good countable way to say fun is a fun activity but it is not really perfect English.

Obrigado pelos exemplos, Anjaluz:

É bom divertir-se com os amigos!
It is good to have fun with friends.

Eu estou me divertindo muito ao falar contigo!
I am having a lot of fun talking with you.

Nossa conversa é bastante divertida!
Our conversation is a lot of fun
Our conversation is rather fun

Um bom divertimento é passear com a cadela!
(Literal) A good fun activity is to walk with the dog.
(Better) It is fun to go walking with the dog.
(Also) A good pastime is walking with the dog.

Uma boa diversão é teclar contigo!
(Literal) A good fun activity is to chat with you.
(Better) It is fun to chat with you.
(Also) A good pastime is chatting with you.

To enjoy

To enjoy has several equivalents in Portuguese. It can mean:
divertir-se com
ganhar prazer por
ficar feliz por causa de

You can use to enjoy for any of those.

A dictionary will tell you that gostar and aproveitar translate as to enjoy. This can be true, but only sometimes. We think gostar is a weak translation of to enjoy, because it normally just means to like. If we say enjoy, we mean more than like. Similarly, with aproveitar, you may take advantage of something but not enjoy it

Remember that to enjoy is always transitive. You have to enjoy something.

The reflexive 'divertir-se' is intransitive. The literal translation of 'divertir-se' is to enjoy yourself, which is intransitive. You can use to enjoy yourself like this (it has almost the same meaning as to have fun):

Did you enjoy yourself with your friends?
Enjoy yourself at the party!
I enjoy myself when I talk with you.

É bom divertir-se com os amigos!
It is good to enjoy yourself with friends..

Eu estou me divertindo muito ao falar contigo!
I am enjoying myself a lot talking with you.

There is also enjoyable (adjective) and enjoyment (noun)

Nossa conversa é bastante divertida!
Our conversation is very enjoyable.
Our conversation is rather enjoyable.

I get enjoyment from our conversation.

Hoje em dia, aqui, a gente ouve o ordem "Enjoy!", talvez num restaurante pelo garçom quando ele traz a comida. Para mim isso é uma das expressões irritantes na moda. Ainda significa "Enjoy something" no contexto.
